Heat the oven
Heat the oven to 425°F (220°C) and line a large rimmed sheet pan. A roomy pan lets the vegetables roast instead of steam.

Start the longest-cooking side
Toss halved baby potatoes with half of the olive oil, salt and pepper. Roast cut-side down for 15 minutes before adding the quicker-cooking ingredients.

Add the vegetables
Toss broccoli, sweet peppers and red onion with the remaining oil and add it to the pan in a single layer. Leave a clear zone for the chicken.

Cook the chicken correctly
Add the Chicken Breasts and continue cooking according to its package directions. If the package uses a different temperature, cook the product separately and combine at the end.

Glaze at the right moment
Brush or drizzle with lemon-garlic pan dressing during the final few minutes so it warms and clings without burning.

Rest, finish and serve
Confirm everything is hot and properly cooked, rest for 2 minutes, then add fresh parsley and lemon zest. Bring the whole pan to the table for an easy family-style supper.
